| the mix of butter and shortening keep the flavor and texture in balance. make sure not to over mix dough 5 cups all-purpose flour, plus more for sprinkling 2 tablespoons plus 2 teaspoons baking powder 2 tablespoons sugar 1 tablespoon salt 1/2 cup plus 2 tablespoons vegetable shortening 8 tablespoons unsalted butter, cut into small pieces 2 cups buttermilk Using a sieve over a bowl, sift together the flour, baking powder, sugar, and salt. Repeat. Add the butter and shortening and, using your fingertips, mix until crumbly. Add the buttermilk and mix with a wooden spoon until the dough just comes together. (Don't over mix!) |
