Under the grill/broiler is definitely the best way to do it. I used to take a nice pumpernickel, layer some cheddar and muenster cheese on it, a little butter on the bread itself, then some pepper and garlic powder on top, maybe some onions.... Great stuff. Another excellent use of cheese is either frying or grilling bratwursts with onions, then laying the muenster cheese on 'em. Add ketchup and enjoy. Bachelor cooking at its best.

Lightly toast the bread in the toaster first, add slices of extra mature cheddar, splash Worcestershire sauce over cheese, lightly grill 'til cheese bubbles and starts to turn golden. Add slices of large tomatoes. Delicious. I do like to idea of adding pepper before toasting. I'll try that next time!

Put the bread under the grill/broiler. Toast one side of the bread. Turn over and put cheese (your preference) on the untoasted side. This is the key to the best cheese on toast. Splash some Worcestershire sauce and tabasco on top. Place back under the grill to melt. Grind some black pepper on if you wish. It's a spicy guey delight.

Fresh mozzarella, sliced thin, and then toasted on sourdough bread. Add a couple of cold tomato slices on top, and you're all set. Yum. (Actually had one this afternoon, before I saw this thread.)

| The Dalek Has Returned | Most of the time, in our family we take toast (from white shepherd's bread ) add some cheddar, quickly sliced in thickish strips, then microwave for a minute or so, but the bread gets soggy and loses its crunch, unless it was toasted black. |
