We love this recipe for General Tso's Chicken... I personally use 3-4 jalapenos per 1.5 lbs of chicken (which is perfect for me, husband and my dad... or two of us can stuff ourselves silly

. but you may not want that many... I love super spicy food so...

Anyhow:
Sauce:
1/4 cup cornstarch
2 TBSP water
1/2 tsp ground ginger
minced garlic 1-2 cloves depending on size...
3/8 c. sugar
1/4 c. soy sauce
1 c chicken broth
2 TBSP white vinegar
2 TBSP white wine
Heat oil to 350+ degrees
Cut chicken into chunks put in a plastic bag w/ one egg and shake till coverd, then add 1/2 cup corn starch. Deep fry till golden, set aside. This takes, by far, the longest
In a jar, put all the ingredients for sauce, and shake well. Saute onions (diced/chopped.. yellow or green if you have them 1 cup-ish) and jalapeno peppers (diced, like I said, I use 3-4 depending on size, but to taste...) for a couple minutes in 1-2 TBSP coconut oil in a LARGE pan or wok, then add the sauce and cook till it thickens, then dump the fried chicken chunks in, cook for a couple minutes to make sure its hot and serve over brown rice! SUPER tasty!!
