No way!!! Growing up isn't about being mature, at least not in every way.
I'm 31 now, father of 3 children, married with what i think is an angel. But really, growing up is about being responsible of/for the people that you love and care about.
Growing up is not about being boring. It's not about forgetting who you are and what you like, you just have to squeeze it in the middle of everything, so that people still know that you're alive.
Am i tired of being an adult sometimes?
YES, but in the middle of this, i also enjoy it. I like watching cartoons with my kids, i like playing with toys - still, i like playing games on my computer, i like being able to find pleasure in putting some silly puzzle together. But i still have to take care of things like shopping, paying the rent, making dinner, or just plain raising my kids in proper way.
But to me, life as an adult certainly doesn't mean being "mature" (can't even say the word without getting goosebumps, uadr) but being responsible and caring.
As for the question "what do i wanna be". Those of you that answars with a jobwish, (maybe you don't like what i'm about to say, but think about it) i think that you already are "mature", you're thinking jobs

What about you, your person. What about when you're not at work, what do you wanna be there?
By the way, i have that job that i wished for
