Don't do it to yourself! Carbohydrate is our most important energy source. Without it, there's no point having protein, as you'll not have the energy to stimulate its use.

If you're trying to lose weight (usual reason for <carbs) it would be an idea to read up on the scientific literature regarding weight loss dieting. A nice place to get a general idea of dietary composition is from a large study conducted last year.

Arch Intern Med -- Abstract: Comparison of 4 Diets of Varying Glycemic Load on Weight Loss and Cardiovascular Risk Reduction...

Abstract only I'm afraid, can't find free full text yet.

I Myself, have a fairly varied diet. The only things I leave out are eggs (fine in cooking) for taste and most seafood for the same reason. I try to make sure I eat tuna a fair bit to make up for the lack of some essential nutrients, as tuna is the only fish I generally like.
Definitely a meat lover, but it is usually part of a broader meal containing veggies, pasta, rice etc.
