Under the grill/broiler is definitely the best way to do it. I used to take a nice pumpernickel, layer some cheddar and muenster cheese on it, a little butter on the bread itself, then some pepper and garlic powder on top, maybe some onions....

Great stuff. Another excellent use of cheese is either frying or grilling bratwursts with onions, then laying the muenster cheese on 'em. Add ketchup and enjoy.
